The Polynesian Resort is set to open their new DVC Island Tower on December 17th and we have more details about the restaurant inside. The tower itself has been met with some hesitation from fans, as the outside design does look more bland than the iconic original buildings. But how do you make everyone enjoy a place more? Food! In this post, we’ll share the menu and a few details about the brand new Wailulu Bar & Grill.
Like most of the restaurants in this area, Wailulu will come with views of Seven Seas Lagoon. There will also be Polynesian-inspired artwork that was crafted exclusively for this location including some pieces have even been created with recycled materials and reclaimed fishing nets. That sounds very promising!

I’m curious how prominent that artwork will be because this place is also described as a pool bar. Generally pool bars aren’t overly fancy. If I had to guess, the atmosphere will be somewhat similar to the recent Palm Breeze Bar at the Disneyland Hotel. That’s a very casual setting with comfortable places to sit but not an in-your-face theme. We’ll find out soon enough but I think Wailulu Bar & Grill will let the view do most of the talking. Speaking of the view, this restaurant will also include firework viewing.
We’ll know more about the restaurant’s atmosphere in just a week when it opens. Let’s get to the menus! For being a pool bar, there’s a nice mix offered here. I’m looking forward to trying this on our next trip to Walt Disney World.

Food Items
- Sweet Potato Hummus, crispy chickpeas, espelette pepper dust, and breadfruit tostones
- Ahi Tuna Crisps: Marinated ahi tuna, crispy fried wontons, avocado crema, sriracha-aioli, and soy glaze
- Grilled Shrimp, smoked paprika, black garlic emulsion, garlic-lemon butter, and crispy garlic
- Spiced Ham Musubi with glazed spam seasoned with traditional furikake and served with crispy rice pearls
- Crispy Chicken Wings: Adobo-marinated, soy glaze, and tomato-fresno pepper relish
- Wayfinder Burger: Two pressed patties, American cheese, onion jam, volcano sauce, and sweet bun served with mac salad or sweet potato fries

- Beef Short Rib Loco Moco: Shiitake mushroom gravy, crispy rice cake, and fried egg
- Grilled Fish of the Day: Green curry broth, jasmine rice, chickpeas, and sweet potato
- Poke Bowl: Sushi-style rice, pickled cucumbers, vegetables, spicy poke sauce, and macadamia nuts with choice of ahi tuna, grilled teriyaki chicken, or grilled tofu
- Chow Mein Salad: Charred cabbage, shishito peppers, hearts of palm, pickled sweet potato, and sunflower butter dressing with choice of sauteed shrimp, grilled teriyaki chicken, or grilled tofu
- Sticky Pork Ribs, salt-cured green cabbage, jicama slaw, and pineapple chips

Kids Meals
- White Cheddar Macaroni & Cheese
- Grilled Teriyaki Chicken

Desserts
- DOLE Whip Sundae with hibiscus meringue and passion fruit crispies
- Chocolate Cake with salted caramel ganache and Chantilly cream infused with the essence of Kona coffee

Breakfast
- Pineapple-Coconut Bread (Available for breakfast only)

Beverages
- Hibiscus Tea: Hibiscus flower-infused tea with lime and agave nectar (Non-alcoholic beverage)
- Kula Strawberry Sake: Wildflowers Junmai Sake, Campari Liqueur, Rockey’s Botanical Liqueur, and wild strawberry
- Passionfruit and Pineapple Daiquiri: Ten to One Caribbean White Rum, Minute Maid Passion Fruit Orange Guava Juice, pineapple, and lime
- Pandan Gin Gin Mule: Pandan-infused Fords Gin, lime juice, and ginger beer

Out of all the things on the menu, the items that I would love to try most are the ahi tuna crisps and the spiced ham musabi! I can’t believe the DVC tower is going to open next week. I kept hearing about the DVC tower all the time when I worked at the Poly two years ago.
Oh I didn’t realize you worked there! That’s cool. The opening kind of snuck up on me too. Agree with your food choices, especially the ahi tuna crisps!
Oh it was part of the Disney College Program I did in 2022. I was originally an attractions cast member at Alien Swirling Saucers, but when that didn’t work out, they moved me to the Poly as a concierge. Yesss, I want ahi tuna now lol!
